Baked Mozzarella Tomatoes

What you’ll need:

  • 4 SOF tomatoes sliced
  • 1 cup shredded mozzarella cheese
  • ½ cup shredded parmesan cheese
  • One rosemary stalk 
  • ¼ tablespoon olive oil

What you’ll do:

  • Preheat oven to 220C
  • Place tomato slices on a parchment-lined baking sheet and put the rosemary
  • Salt the tomatoes for 5 minutes then top each tomato with a layer of parmesan and then a layer of mozzarella
  • Drizzle lightly with olive oil then bake for 8-10 minutes or until cheese is melted and bubbly
  • Turn off the oven and serve hot with a sprinkle of dry basil
