What you’ll need:
- 4 SOF tomatoes sliced
- 1 cup shredded mozzarella cheese
- ½ cup shredded parmesan cheese
- One rosemary stalk
- ¼ tablespoon olive oil
What you’ll do:
- Preheat oven to 220C
- Place tomato slices on a parchment-lined baking sheet and put the rosemary
- Salt the tomatoes for 5 minutes then top each tomato with a layer of parmesan and then a layer of mozzarella
- Drizzle lightly with olive oil then bake for 8-10 minutes or until cheese is melted and bubbly
- Turn off the oven and serve hot with a sprinkle of dry basil
