Baked White Eggplant Boats

What you’ll need

  • 2 SOF Sweet potatoes, diced
  • 40gm crumbled Greek feta
  • 7-8 White SOF eggplants
  • 1 tablespoon olive oil
  • 1 SOF lime, juice
  • Handful SOF raisins
  • Salt and pepper to taste
  • 1 teaspoon dried oregano
  • 1 tablespoon coconut oil
  • 1 tablespoon SOF honey, any variety

What you’ll do:

  1. Cut the eggplants lengthwise into two halves then brush a bit of coconut oil
  2. Cut sweet potatoes into small cubes then season with coconut oil, salt, pepper, oregano and honey.
  3. Pop both in the oven on 180C for approximately 40 minutes
  4. Once cooked, scour the eggplant lengthwise to add filling
  5. Mix sweet potatoes, crumbled feta, oregano, raisins, Olive oil, fresh lime juice, salt and pepper.
  6. Fill Eggplants with the sweet potato mix and enjoy!
