What you’ll need
- 2 SOF Sweet potatoes, diced
- 40gm crumbled Greek feta
- 7-8 White SOF eggplants
- 1 tablespoon olive oil
- 1 SOF lime, juice
- Handful SOF raisins
- Salt and pepper to taste
- 1 teaspoon dried oregano
- 1 tablespoon coconut oil
- 1 tablespoon SOF honey, any variety
What you’ll do:
- Cut the eggplants lengthwise into two halves then brush a bit of coconut oil
- Cut sweet potatoes into small cubes then season with coconut oil, salt, pepper, oregano and honey.
- Pop both in the oven on 180C for approximately 40 minutes
- Once cooked, scour the eggplant lengthwise to add filling
- Mix sweet potatoes, crumbled feta, oregano, raisins, Olive oil, fresh lime juice, salt and pepper.
- Fill Eggplants with the sweet potato mix and enjoy!
