Onion & Potato Skillet

What you’ll need:

  • 2 SOF potatoes, peeled and thinly sliced
  • 1 SOF golden onion, peeled and sliced
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • One egg (if preferred)

What you’ll do:

  1. Heat your skillet over medium-high heat.
  2. Cut the potato and onion slices in half. Salt potatoes and onions. Add oil and butter to the pan. When the butter foams, add potatoes and onions to the skillet.
  3. Let the potatoes and onions crust, for 2 to 3 minutes, then turn and let them crust again. Keep turning the potatoes and onions over for about 20 minutes, until they are evenly golden and crusted.
  4. If you would like to have this dish as a brunch or a breakfast item, make a hole in the middle of the onion and potatoes where you can an egg. Let the egg work as an adhesive to all elements then cover the skillet for two minutes. Once the egg is cooked, add seasoning and any fresh herb on top then serve while still in the skillet.
