Our spring onions (also green onion or scallion) are mild enough to be enjoyed raw, but also add vibrant flavor and color to stir-fries, soups, mixed into mashed potato, breakfast eggs, added to quiche, or plain sizzled in butter. They are also an excellent source of vitamin K, vitamin C, vitamin A, and folate. If you ever have more than you need right now at home, chop them up and freeze them until needed.
